Sweet Potato Cake: A Vegan Cake Recipe

In vegan pastry making, ingredients such as eggs and butter are replaced with alternatives from fruits and vegetables. Sweet potato, being both starchy and sweet, is an excellent choice for adding texture to an egg-free cake. Here is an easy recipe for a vegan sweet potato cake, prepared in the style of an American sweet potato bread.

Ingredients

Here are the necessary ingredients to prepare a vegan sweet potato cake for 6 people:

1 medium sweet potato.
150 g of flour.
50 g of brown sugar.
2 packets of vanilla sugar.
1 packet of baking powder.
1 tablespoon of gingerbread spices.
100 g of apple sauce.
5 cl of sunflower oil.
1 tablespoon of maple syrup.
1 tablespoon of unsweetened plant-based milk.
1 knob of vegetable margarine for the mold.

Sweet Potato Mash Preparation

To make a vegan sweet potato cake, start by preparing a sweet potato puree.

1. Peel and wash the sweet potato.

2. Cut the sweet potato into pieces.

3. Cook the sweet potato in a steamer or in boiling water until the pieces are tender.

4. Mash the cooked sweet potato into a puree using a potato masher or a simple fork.

Note: To save time, you can also use frozen sweet potato puree and simply thaw it in a saucepan without adding salt or fat.

Preparation of dry ingredients

While the sweet potato puree cools, mix the dry ingredients in a large bowl.

Pour in the flour, baking powder, brown sugar, vanilla sugar, and gingerbread spices in that order and mix well.

Cake Batter Preparation

To prepare the dough for the vegan sweet potato cake, all you have to do is add the sweet potato puree and the liquid ingredients.

Gradually incorporate the applesauce, sweet potato puree, sunflower oil, maple syrup, and unsweetened plant-based milk.

Mix well until the dough takes on a uniform texture.

Preparation of the cake mold

1- Grease a cake pan with a dollop of vegetable margarine.

2- Pour the cake batter into the pan and smooth the top with a flexible spatula.

Note: The batter for this vegan sweet potato cake is not runny. Do not be surprised if you end up with a rather thick mixture.

Baking the Sweet Potato Cake

1- Preheat your oven to 180°C (356°F).

2- Bake the vegan sweet potato cake for 40 minutes.

3- The cake is done when it has a nice golden color and a knife inserted into the center comes out dry.

4- Let the cake cool slightly before unmolding it onto a serving plate.

Note: This cake, with its delicious gingerbread flavor, is perfect for a snack, breakfast, or as part of a vegan gourmet coffee.
