Chia Seed Pudding Stracciatella Style: An Easy Recipe.

If you find chia seed desserts not indulgent enough, try the following recipe! I suggest you discover how to prepare stracciatella chia pudding with almond milk, maple syrup, and dark chocolate chips.


Here are the necessary ingredients to prepare chia pudding in stracciatella style for 6 people:

60 cl of unsweetened almond milk
3 tablespoons of sweetened cocoa or carob powder
1 tablespoon of maple syrup
7 tablespoons of chia seeds
60 g of dark chocolate chips
2 squares of dark chocolate for decoration

Note: If you replace the hot chocolate powder with carob powder, adjust the amount of maple syrup (increasing it to 2 or 3 tablespoons) so that your dessert is sweet enough to your taste.

Preparation of chocolate milk.

To prepare this stracciatella chia pudding, start by flavoring unsweetened almond milk.

1- Pour the almond milk into a bowl.

2- Add maple syrup.

3- Incorporate cocoa powder or carob powder by sifting it through a sieve and mixing well with a whisk to avoid lumps.

Preparation of chia seeds.

Chia seeds are known for being rich in mucilage and naturally gelling. When mixed with a liquid such as water, milk, or plant-based milk, they swell and give the preparation a pudding or panna cotta-like texture.

1- Add chia seeds to the bowl containing flavored almond milk.

2- Mix well for 2 minutes to prevent the seeds from sticking together.

3- Place the container in the refrigerator for 30 minutes to allow the preparation to start to set.

Assembly of verrines

For assembling this chia pudding in stracciatella style, I suggest using small glass jars or transparent cups.

1- Start by distributing chocolate chips at the bottom of 6 jars.

2- Add the mixture made with almond milk and chia seeds.

3- Mix each jar with a small spoon to evenly distribute the chocolate chips inside the dessert cream.

4- Place the jars in the refrigerator for at least 4 hours or, better yet, overnight to set.


Once your chia pudding verrines in stracciatella style are set, all you have to do is decorate them with dark chocolate shavings.

Simply use a vegetable peeler to obtain small shavings of dark chocolate to sprinkle on top of your verrines.
