2 tablespoons of chopped parsley.
Salt and pepper.

Chopping the ingredients

The chopping of ingredients is the first step in preparing this turkey stew with chestnuts.

1- Cut the turkey escalopes into cubes of about 2 cm on each side.

2- Sort the chestnuts, opening them if necessary to remove any woody parts.

3- Finely chop the shallots and set aside.

Broth preparation

For this braised turkey with chestnuts recipe, you can of course use homemade chicken broth, after cooking a pot-roasted chicken for instance.

If you don't have homemade broth, dissolve half a cube of poultry stock in 150 ml of hot water. Mix well with a whisk and set aside.
