Have you ever combined the fragrances of rose and lemon in your desserts? If you want to discover this delicious pairing, try this easy and light recipe for lemon and rose creams! These small creams made with plant-based cream and chia seeds offer a dessert that is both healthy and delicious.

Ingredients

Here are the necessary ingredients to prepare lemon and rose creams for 6 people:

4 eggs
2 tablespoons of honey
1 packet of vanilla sugar
90g of almond cream
2 large yellow lemons
20g of chia seeds
2 tablespoons of rose floral water
dried rosebuds for decoration

Note: To prepare this dessert, we recommend using a liquid honey with a neutral flavor such as acacia honey or flower honey. Also, make sure to use a high-quality edible organic rose floral water (without alcohol or additives).

Preparation

The preparation of lemon and rose creams is child's play.

1- Squeeze the lemons and reserve the juice.

2- Beat the eggs into an omelette and incorporate the vanilla sugar and liquid honey while whisking vigorously.

3- Add the vegetable cream, yellow lemon juice and rose floral water.

4- Finally, incorporate the chia seeds and mix gently to distribute them evenly in the liquid.

Cooking

1- Preheat your oven to 200°C.

2- Divide the mixture into 6 small heat-resistant ramekins.

3- Bake the lemon and rose creams for between 12 and 15 minutes.

Note: The cooking time varies depending on the amount of juice in the lemons and the thickness of the ramekins used.

4- Check the cooking by moving the tray containing the ramekins.
The small creams are cooked when they no longer tremble.

Decoration.

After cooking, the small chia seeds are visible on the surface of the creams.

For an even prettier visual, you can decorate each of the lemon and rose creams with dried rose buds. These dried flowers are sold in herbal shops and in some stores that sell tea and herbal teas.

In this recipe, they are only used for decoration because they cannot be consumed as is. If you buy them, you can use them in your homemade teas and infusions, to flavor tea or make homemade rose syrup.

Tasting tips.

You can enjoy these lemon and rose creams warm or cold. Try both versions: the taste and especially the texture are different after being refrigerated!

In this dessert, honey and rose floral water help balance the acidity of the lemon juice. Chia seeds, which swell when in contact with any liquid, have a gelling effect.

Chia seeds are known to be excellent for health as they are rich in fiber, minerals, and omega 3. It is also important to know that these seeds are not irritating to the intestines. On the contrary, these small seeds with multiple virtues facilitate intestinal transit because they are rich in mucilage.

In summary, these small creams make for a healthy, digestible, and delicious dessert. This recipe is also suitable for vegetarians who eat eggs.
