Flourless Nut Cake: A Very Easy Recipe

If you have any walnuts left over that you don't know what to do with, try our flourless walnut cake recipe! Very easy to prepare, this cake is not very sweet but delicious with a coffee or for a snack.

Ingredients

Here are the ingredients needed to make a flourless walnut cake for 4 people:

300 g shelled walnuts
40 g of butter
2 eggs
50 g of brown sugar
a nice pinch of salt
a knob of butter for the mold

Preparation of the nuts

The preparation of this flourless walnut cake is rather easy and quick.

1- If you use whole walnuts, the most time consuming step is to break and shell the walnuts to recover the kernels.

2- Once you have 300 g of kernels, divide them into two equal parts.

3- Blend half of the walnut kernels into a fine powder.

4- Blend the other half more coarsely, so as to obtain small nut chips.

Preparation of the cake

1- Melt the butter in a saucepan and set aside.

2- Break the eggs by separating the whites from the yolks.

3- Whisk the yolks with the brown sugar until the mixture turns white.

4- Add the melted butter without stopping to whisk.

5- Add the walnut powder and walnut chips and mix well. Don't worry if the batter of this flourless walnut cake seems very thick.

6- Beat the egg whites until stiff with the pinch of salt and fold them gently into the mixture.

Cooking

1- Preheat your oven to 180°C.

2- Butter a small rectangular ovenproof dish.

3- Pour the dough and level the top with a fork.

4- Bake the flourless walnut cake for 40 minutes until golden brown.

5- Let the cake cool completely before cutting it into small squares.
