Scrambled Eggs With Sprouted Seeds: A Spring Recipe

One Easter tradition dictates that eggs should be eaten during this festive meal. If you're looking for a lighter appetizer than the traditional deviled eggs, try our scrambled eggs with sprouted seeds recipe. It's very easy to make with fresh seasonal ingredients.

Ingredients

Here are the necessary ingredients to prepare scrambled eggs with sprouted seeds for 4 people:

6 large, very fresh eggs.
2 tablespoons of liquid or plant-based cream.
2 pinches of salt.
3 turns of pepper mill.
15 g of unsalted butter.
1 small bunch of radishes.
1 bowl of sprouted seeds of your choice.

Note: For this Easter recipe, you can use different types of sprouted seeds. For instance, you can sprinkle this spring starter with radish seeds or alfalfa, or even with a mix of fennel, mustard, and alfalfa seeds…

Scrambled Eggs Preparation

To prepare scrambled eggs with sprouted seeds, I advise you to use organic and extra fresh eggs. This ingredient should be of the highest possible quality because scrambled eggs are the foundation of the recipe and remain somewhat runny when cooked.

There are many ways to make scrambled eggs. Here is one of the easiest methods.

1- In a large bowl, whisk the eggs.

2- Add liquid cream or a plant-based alternative like Oat Cuisine and mix well.

3- Simply season with salt and pepper.

Note: for this recipe, I chose not to add any spices or herbs to the eggs because the mustard, alfalfa, and fennel sprouted seeds I used have a very pronounced flavor.

Preparation of the toppings

To enhance the scrambled eggs with sprouted seeds, you will, of course, need sprouted seeds bought from a store or grown at home in a sprouter. You will also need pink radishes, a seasonal vegetable that adds crunch and color to this spring recipe.

1- Trim the tops off the radishes, but don't throw them away! You can make a delicious radish leaf soup with these green leaves, which are milder in taste than one might think.

2- Wash the radishes and slice them into thin rounds as shown in the picture.

Scrambled Eggs Cooking

Cooking the eggs is the most delicate step in this scrambled eggs with sprouted seeds recipe. While one of the classic methods involves cooking scrambled eggs in a double boiler, I prefer using a simple skillet or a heavy-bottomed saucepan.

1- Heat the skillet or saucepan over medium heat, then add the butter.

2- Once the butter foams, pour in the egg mixture.

3- As soon as the eggs begin to set, lower the heat and use a flexible silicone spatula to scramble them.

4- Simply stir vigorously the contents of the pan and avoid overcooking to achieve scrambled eggs with the perfect consistency, neither too runny nor too dry.

Scrambled Eggs with Sprouted Seeds

1- Distribute the scrambled eggs into 4 ramekins.

2- Arrange 5 radish slices in a rosette pattern to form a small flower in each ramekin.

3- Add a pinch of sprouted seeds and serve the scrambled eggs with sprouted seeds immediately.
