The King's Cake With Speculoos: A Gourmet Recipe

To change a little from the traditional frangipane cake, we suggest you discover a recipe based on speculoos cookies. The speculoos king cake is both greedy and very easy to make.

Ingredients

Here are the ingredients needed to make a Speculoos King Cake for 4 people:

2 rolls of puff pastry
100 g of speculoos cookies
50 g almond powder
65 g of soft butter
2 tablespoons of agave syrup
1 egg

Preparation of the cookies

Blend the speculoos cookies in a food processor until you have a fine powder.

Reserve the cookie powder for the rest of the recipe. It will replace some of the sugar and butter in the filling of this speculoos galette des rois.

Preparation of the filling

1- Melt the butter in a saucepan and let it cool.

2- Separate the egg and keep the yolk for gilding the cake.

3- Pour the cookie powder in a container and add the almond powder

4- Add successively the egg white, the agave syrup and the melted butter until a homogeneous paste is formed.

To note: most recipes for speculoos galettes des rois use speculoos spread. For my part, I preferred to use cookies and melted butter to avoid certain ingredients like palm oil and sugar syrup.

Assembly of the cake

1- Unroll the first puff pastry on a baking sheet, keeping the parchment paper.

2- Use a pastry ring or a cake pan to draw a diameter of about 22 cm on the pastry.

3- Spread the speculoos filling, leaving a margin of at least one centimeter around the edge. Add an Epiphany bean to the filling, deliberately placing it towards the edge to limit the risk of falling on it when you cut the cake.

4- Moisten the edge of the galette with a brush to facilitate the welding of the two puff pastry doughs, then add the second puff pastry dough on the filling and weld the two doughs by pressing the edge with your thumb.

Finishing of the cake

1- Cut the cake to the desired diameter using your pastry ring or cake pan and save the excess puff pastry for another recipe.

2- Chisel the edge of the cake. This consists in making small incisions with the blade of a knife.

3- Draw a pattern on the top of the cake with the back of the knife blade.

Gilding and cooking of the cake

1- Preheat your oven to 200°C.

2- Mix the egg yolk you reserved with a little water before spreading it with a brush on the top of the cake.

3- Put the speculoos king cake in the oven and bake it 15 minutes at 200°C. Turn down the oven and continue baking about 15 minutes at 180°C.

Tip to make the cake shine

If you want to make your galette des rois shine like at the baker's, the trick is to brush it with a sugar syrup when it comes out of the oven.

1- In a saucepan, mix a tablespoon of sugar with a tablespoon of water.

2- Bring to a boil and let it boil for a few minutes until the syrup becomes translucent.

3- Brush the syrup over the Speculoos King Cake with a kitchen brush.
