No-bake Chocolate Tartlets: An Easy Recipe

If you're looking for a great chocolate dessert to impress your significant other on Valentine's Day or your guests for any other occasion, try this no-bake chocolate tartlet recipe! To make this pretty individual dessert, there's no need to know how to make shortcrust pastry or even to turn on the oven.

Ingredients

Here are the necessary ingredients to prepare no-bake chocolate tartlets for 4 people:

200 g of petit-beurre biscuits.
70 g of sweet butter.
200 g of dark baking chocolate.
160 g of liquid cream.
8 tablespoons of dried fruits.

Note: to prepare this dessert in a plant-based or vegan version, simply choose lightly sweetened dry biscuits made with vegetable oil, replace the butter with coconut oil, and the liquid cream with a plant-based cream made from oats or soy.

Preparing cookies

To make no-bake chocolate tartlets, you need to prepare a crust from crushed biscuits. The method is exactly the same as that used for making a raw cheesecake.

1- Crush the Petit-Beurre biscuits until you get a biscuit powder.

2- Melt the butter or coconut oil over low heat.

3- Add the biscuit powder and mix to form a dough.

Note: You can add a little water if your mixture is too crumbly.

Tartlet crust preparation

No-bake chocolate tartlets are very easy to make as there is no need to bake the crust. However, they must be prepared in advance because the crust needs to rest for several hours in the fridge before being filled with chocolate.

1- For this recipe, it is best to use 12 cm diameter ceramic tartlet molds. The choice of container is important because these tartlets do not come out of the molds.

2- Distribute the biscuit crumb-based dough at the bottom of the molds.

3- Firmly press down the dough with the back of a teaspoon.

4- Place the tartlet molds in the refrigerator for 3 hours.

Chocolate Ganache Preparation

The filling for these no-bake chocolate tartlets is a simple chocolate ganache, made with either liquid or plant-based cream.

1- Break the chocolate into a saucepan.

2- Add the cream of your choice.

3- Melt everything over very low heat, stirring constantly, until you get a smooth and shiny ganache.

Assembling the chocolate tartlets

1- Remove the pastry bases from the refrigerator.

2- Pour the chocolate ganache over the biscuit-based pastry bottoms.

3- Put the no-bake chocolate tartlets back in the refrigerator for at least 3 hours.

Note: You can also prepare this dessert the day before and keep the tartlets in the refrigerator overnight.

Chocolate tartlets decoration

Once the chocolate ganache has set, you can decorate the no-bake chocolate tartlets. I recommend sprinkling these tartlets with a mix of dried fruits to add color and crunch.

For this recipe, I've chosen a mix of dried fruits known as "Tibetan mix" for its beautiful red color. It consists of a superfruit blend with dried cranberries, goji berries, and mulberries.

If you don't have the Tibetan mix, you can simply sprinkle the tartlets with crushed hazelnuts or almonds, pink pralines, or praline powder.
