Melon Soup With Lavender: A Very Easy Recipe

Summer is melon season. If you don't want to get tired of these sun-drenched fruits, or if you want to use a slightly less ripe specimen than the others, you can prepare a cold soup recipe full of flavors. Lavender Melon Soup is a light dessert with the delicious scent of flowers and honey.

Ingredients

Here are the ingredients needed to make Lavender Melon Soup for 4 people:

a nice ripe melon
a heaping teaspoon of dried lavender flowers
one heaping tablespoon of lavender honey
20 cl of water

To note: if you don't have lavender honey, you can use a simple all-flower honey.

Preparation

The preparation of Lavender Melon Soup is very easy. However, you need to prepare this dessert in advance so that the cold soup has time to rest in the refrigerator for several hours.

1- Wash the melon. Cut it in half and remove the seeds with a spoon.

2- Cut it into slices to remove the skin more easily, then cut the flesh into small cubes in a shallow dish.

To note: if you have a Melon baller, feel free to use it to hollow out your fruit and make even more aesthetically pleasing Melon balls.

3- Bring the water to a boil in a saucepan.

4- When it's simmering, add the dried lavender flowers and let it simmer for 10 minutes to make a concentrated lavender infusion.

5- Strain the lavender infusion and sweeten it with honey before pouring it into the container containing the Melon pieces.

6- Let it cool at room temperature before placing the container in the refrigerator.

7- Let this dessert sit in the refrigerator for several hours or ideally overnight so that the Melon soaks up the lavender scent.

Variants

Following the same recipe, it is quite possible to prepare a cold melon soup with verbena or mint.

These are two other flavors that go well with this fruit and allow you to enjoy an original melon soup.

Just replace the lavender flowers with some fresh or dried vervain or mint leaves and use a flower or acacia honey in place of the lavender honey.

Serve this lavender melon soup in bowls or pretty cups.

If you prefer a smooth texture like a fruit gazpacho or an American-style smoothie, simply run the melon and lavender infusion mixture through a blender before serving.

For an extra touch of indulgence, you can accompany this fresh and light dessert with a small cookie like an almond tuile.
