Leek Fritters: An Easy Recipe

If your children are reluctant to eat leeks, here is a recipe that could finally make them love this vegetable! Leek fritters are easy and quick to prepare with just a few common ingredients. We invite you to discover this delicious and economical recipe in pictures.

Ingredients

Here are the necessary ingredients to prepare leek fritters for 4 people:

300 g of leeks.
2 tablespoons of olive oil.
100 g of flour.
1 packet of baking powder.
2 eggs.
1 pinch of turmeric powder.
1 pinch of cumin powder.
salt and pepper.
grape seed oil for cooking.

Note: To flavor these vegetable fritters, I used turmeric and cumin. But feel free to enhance these savory fritters with the spices or herbs you prefer, such as curry, paprika, or dill.

Preparation of the leek compote

The recipe for leek fritters is rather easy. But it requires some time because you have to pre-cook the leeks in a compote before incorporating them into the fritter batter.

1- Sort and thoroughly wash the leeks in order to keep only the tender parts, namely the white part of the leeks and the light green part.

2- Finely slice the leeks.

3- Heat olive oil in a pan and sauté the sliced leeks without browning. Season with salt and pepper.

4- Reduce the heat and cook the leeks over low heat and covered for about 20 minutes.

5- If the leeks start sticking to the pan, add a little water and continue cooking over low heat until they are well cooked down.

Preparation of the donut dough

The preparation of the batter for fritters is very simple.

1- Once your leeks are well cooked, pour them into a bowl.

2- Add one whole egg and the yolk of the second egg.

3- Beat the remaining egg white until stiff peaks form.

4- Gradually add flour, baking powder, and spices of your choice to the bowl, then mix well.

5- Finally, gently fold in the beaten egg white to loosen the batter and make the leek fritters softer.

Leek fritters cooking

I advise you to cook the leek fritters in grape seed oil. This oil is suitable for frying as it withstands high temperatures well.

For this recipe, it is unnecessary to use a deep fryer. Cooking in a pan with a little grape seed oil allows for less greasy fritters as they are less soaked in oil.

1- Heat the grape seed oil in a large pan over high heat.

2- To form the leek fritters, use a tablespoon and gently slide a spoonful of the mixture into the hot oil vertically.

3- I advise you to take small spoonfuls of batter to avoid getting too large fritters, which would be denser and more difficult to cook.

4- Cook the fritters for about 2 minutes on each side.

Note: Depending on the more or less fluid texture of your batter, your fritters may spread in the pan like vegetable pancakes; remember to space them out well when pouring spoonfuls of batter into the hot oil.

5- When the fritters are golden brown, drain them on absorbent paper as shown in the photo below. This step is essential to remove excess cooking oil.

Tasting tips

Serve the leek fritters without delay as they are best when served hot.

Serve them with raw vegetables such as a green salad or a tomato salad depending on the products available in season.
