Ingredients

  • - 1 kg of pumpkin
  • - 2 eggs
  • - cheese: parmesan, Gruyère or mozzarella of your choice
  • - 2 tablespoons of thick cream
  • - a pinch of cinnamon and ginger
  • - 1 knob of butter or 1 tablespoon of olive oil
  • - salt and pepper to taste

Preparation

1. Preheat the oven to 210°C (410°F).

2. Peel the pumpkin and cut it into pieces. In a saucepan, sauté it over low heat, covered and without water. Season with salt and pepper. The pumpkin will release its water, allowing it to cook in its own juice.

3. In another bowl, whisk the eggs until you get a smooth consistency.

4. After about 10 to 15 minutes, when the pumpkin starts to soften, increase the heat to medium and remove the lid to let the juice evaporate.

5. When the pumpkin is tender and easy to mash, remove it from the heat and mash it with a fork.

6. Mix the mashed pumpkin with the eggs, add the cream, adjust the seasoning, and then incorporate the spices. A small pinch of sugar can also be added to enhance the sweetness of the pumpkin!

7. Transfer the mixture to a buttered or oiled baking dish, then top with the cheese of your choice.

8. Bake for 10 to 15 minutes until the top is golden brown.

9. This gratin pairs wonderfully with spicy meats.
