3. Wash the potatoes thoroughly, then cut them in half lengthwise without peeling them.
4. Arrange the first row of cut potatoes cut side up in the Dutch oven. Season with salt and pepper and add onion slices on each half.
5. Then, place a second (or even a third) row of potatoes staggered, repeating the seasoning and adding onions.
6. Finally, cover everything with aluminum foil and put the lid on the Dutch oven.
7. Let simmer on very low heat for about 2 hours.
