Ingredients
- - 4 chicken breasts
- - 3 peppers (yellow, green, and red)
- - 1 onion and 1 clove of garlic
- - 2 teaspoons of sweet paprika
- - 250 g of fresh mushrooms
- - Salt and pepper to taste
- - Olive oil for cooking
Preparation
1) Finely slice the garlic and onion.
2) In a wok, sauté them in a drizzle of olive oil until translucent.
3) Add the diced peppers, then continue cooking until they become tender, about 10 minutes.
4) Then stir in the sliced mushrooms and continue cooking until they are well done.
5) Set this mixture aside in a dish.
6) In the same pan, cook the chicken breasts cut into pieces in a bit of olive oil, while adding the paprika. Stir well to coat.
7) When the chicken is nicely browned, add the pepper and mushroom mixture, and season with salt and pepper.
8) Let everything simmer on low heat until you're ready to enjoy, ideally served with Thai rice.
