Ingredients

  • - 500 g of Pasta: choose from Spaghetti, Tagliatelle, Penne, or Macaroni
  • - 150 to 200 g of bacon, smoked or not
  • - 2 fresh tomatoes
  • - 1 large onion or a few shallots
  • - Mushrooms of your choice
  • - 20 cl of cream
  • - Cognac to taste
  • - Parmesan, Gruyère, or Sbrinz cheese
  • - Olive oil, salt, and pepper to taste

Preparation

1. In a pot of boiling water, cook the pasta according to the package instructions.

2. Meanwhile, in a wok, drizzle a little olive oil (the bacon will release fat). Heat over medium heat, then add the finely chopped onion or shallots along with the bacon. Let them brown for a few minutes before adding the sliced mushrooms.
3. Season with salt and pepper (feel free to add your favorite spices), then cook the ingredients until they are tender. Then add a quarter of the cream and mix.
4. Drain the pasta and incorporate it into the wok. Pour the rest of the cream over it and mix well. Drizzle with Cognac and carefully flame it with a lighter. Stir well to coat the flavors.
5. Finally, add the diced tomatoes, mix again, taste, and adjust the seasoning if necessary.

6. Serve in a dish or individual plates, finishing with a generous sprinkle of grated cheese (Gruyère, Parmesan, and Sbrinz). You can also add fresh parsley and basil for a touch of color.
