Ingredients
- - 1 pike of about 2 kg, prepared
- - 150 g of fresh mushrooms
- - 4 shallots, finely chopped
- - 25 cl of dry white wine
- - 10 cl of thick fresh cream
- - 50 g of unsalted butter
- - 1 tablespoon of chopped herbs (parsley, chervil, chives)
Preparation
1. Start by finely chopping the shallots and the mushrooms.
2. Then place the pike in a fish poacher, adding the mixture of chopped mushrooms and shallots. Season with salt and pepper, moisten with the white wine, and bring to a boil.
3. Once the fish is cooked, remove it from the poacher and keep it warm.
4. Take the cooking liquid and pour it into a saucepan. Let it reduce to concentrate the flavors.
5. Then incorporate the fresh cream, and add the butter cut into small cubes, whisking to obtain a smooth sauce.
