Ingredients

  • - 1 beef tongue
  • - 3 broth cubes (beef or vegetables)
  • - 2.5 liters of water
  • - 2 tablespoons of vinegar
  • - 1 teaspoon of mustard
  • - salt and pepper to taste
  • - 6 tablespoons of peanut oil
  • - a pinch of chili paste
  • - 1/2 chopped onion
  • - 1 tablespoon of chopped parsley

Preparation

1) In 2.5 liters of boiling water, dissolve the broth cubes.

2) Let the broth simmer at a gentle boil for 5 minutes, then immerse the whole beef tongue.

3) Once the boil resumes, cook for 2 hours over medium heat.

Note: Check the doneness of the meat by inserting the blade of a knife.
4) Once the tongue is cooked, let it cool, then prepare the spicy sauce. In a bowl, mix the vinegar, mustard, salt, and pepper. Gradually whisk in the oil, as you would for a vinaigrette. Add the chili paste, chopped onion, and chopped parsley to the sauce.
