- - For the base :
- - 150 g of biscuits of your choice (for example, Petits Beurre)
- - 85 g of melted butter
- - a little cinnamon (optional)
- For the creamy topping :
- - 600 g of cream cheese (like Philadelphia)
- - 300 g of plain yogurt
- - 3 teaspoons of fresh lemon juice
- - 75 g of powdered sugar
- - 1 packet of powdered gelatin
- Use a 20 cm diameter springform pan (you can opt for a pastry ring lined with parchment paper for easy removal).
Preparation
1. Melt the butter in the microwave. Then, crumble the biscuits into fine pieces.
2. In a mixing bowl, combine the crushed biscuits and the melted butter. Add a pinch of cinnamon for a touch of flavor.
3. Line the bottom of the pan with the biscuit mixture and place it in the refrigerator to firm up.
4. In another mixing bowl, vigorously mix the cream cheese with the lemon juice and yogurt until you achieve a smooth and creamy mixture.
5. In a small saucepan, combine the gelatin, sugar, and 150 ml of water. Bring to a boil while stirring.
