Ingredients
- - 400 g of strawberries (you can also choose other red fruits)
- - 80 g of sugar
- - 2 egg whites
- - 2 sheets of gelatin
- - 200 ml of liquid cream or 120 g of unsweetened semi
- - skimmed condensed milk
- - a splash of lemon juice
- - a few leaves of mint, coriander, or thyme
Preparation
1. Wash your strawberries (or other fruits of your choice) thoroughly, then place them in a blender with a touch of coriander or thyme, without adding too much, to obtain a smooth puree.
2. Meanwhile, soak the gelatin in cold water to soften it.
3. Whip the egg whites with a pinch of salt, then gradually add the sugar to form a light meringue.
4. In another bowl, whip the cream into whipped cream or beat the condensed milk until it becomes frothy.
5. In a saucepan, place the previously drained gelatin with a little lemon juice. Heat gently for a few minutes, then remove from heat and incorporate this mixture into the strawberry puree.
6. Gently fold the whipped egg whites into the strawberry puree, then slowly incorporate the whipped cream or whipped condensed milk.
7. Chill everything in the refrigerator for 3 to 4 hours.
8. Serve the mousse in cups, garnished with chopped mint on top, and decorate as desired with fruits or a bit of whipped cream.
