Ingredients

  • - 1 kg of ripe cherries, preferably Bigarreau for their beautiful shape and delicious taste.
  • - 300 to 400 g of granulated sugar, depending on your preferences and the variety of cherries chosen.
  • - 1 l of water.
  • - Optional: Armagnac, Cognac, or Kirsch if desired.

Preparation

1. Carefully clean and stem the cherries, then let them dry completely.
2. In the meantime, prepare the syrup: mix the water and sugar until the sugar is completely dissolved. You can make an alcoholic syrup by adding about 10 cl of Armagnac, Cognac, or Kirsch per one-liter jar.
3. Pack the cherries into perfectly clean jars, trying to press down the fruit without crushing or splitting them.
4. Cover the cherries with the prepared syrup.
5. Seal the jars tightly and proceed with sterilization by submerging them in boiling water for 25 minutes.
