Ingredients

  • - 1.5 kg of fresh blackberries
  • - 45 cl of pure water
  • - 700 g of sugar (to be adjusted according to the juice of the blackberries)
  • - A piece of fresh ginger or the juice of one lemon, as desired

Preparation

1. In a saucepan, bring the water to a boil with the blackberries, stirring occasionally.
2. Once the blackberries start to burst, transfer them to a cheesecloth and squeeze well to extract as much juice as possible.
3. Weigh the juice obtained and add about 700 g of sugar for every 1 kg of liquid, making sure to mix well.
4. Put the mixture back on the heat and bring to a boil for 7 to 10 minutes, adding the ginger or lemon juice according to your preference.
5. To check the set, place a small drop of jelly on a cold tilted plate; it should not run if the consistency is correct.
6. Fill jars with the jelly, seal them tightly, and let cool completely at room temperature.
