- - 300 g of Brussels sprouts, fresh or frozen
- - 1 carrot
- - 2 ripe tomatoes
- - 1 onion
- - 1 shallot
- - A small piece of sugar or 1 teaspoon of honey
- - 200 ml of water (or 100 ml of water + 100 ml of white wine)
- - Salt, pepper, fresh parsley
Preparation
1. Start by thoroughly cleaning the Brussels sprouts, then blanch them for 10 minutes in salted boiling water.
2. In a casserole (preferably cast iron) or a large skillet, sauté the finely chopped onions until they become translucent.
3. Add the diced tomatoes, the julienned carrot (or grated, according to your preference) and the minced shallot, then cook for 2 to 3 minutes.
4. Drain the Brussels sprouts and add them to the casserole.
5. Season with salt and pepper, and add the chopped parsley along with the honey or sugar.
6. Mix everything well. Let it simmer on low heat, partially covered, for about 30 minutes.
7. Add a little water from time to time to prevent sticking and to create a nice sauce.
8. Stir frequently so that the Brussels sprouts absorb this delicious sauce well.
9. Serve hot, ideally with a pork chop or a slice of grilled bacon.
