Ingredients

  • - 2 kg of ripe figs
  • - 4 large onions finely sliced
  • - 700 g of granulated sugar
  • - 6 dl of white vinegar with tarragon flavor
  • - 1 teaspoon of freshly grated nutmeg
  • - 1 teaspoon of ground ginger
  • - 2 pinches of grey Guérande salt
  • - 3 turns of the white pepper mill finely ground

Preparation


1. In a copper basin, start by cooking the onions until they become translucent. To prevent them from taking too much color, feel free to add a little water (2 or 3 tablespoons will do).

2. Once the onions are well cooked, add the figs that you have previously stemmed and chopped into pieces (quarters works well).

3. Next, add the sugar and cook everything for about 10 minutes. Don't forget to use a skimmer to eliminate as many seeds as possible that might be there.

4. Now pour in the vinegar along with the spices, then let simmer on low heat for about two hours. The cooking should allow the chutney to thicken to a consistency similar to that of a jam.

5. When the chutney is ready and still very hot, fill jars reserved for jams. Close them immediately and turn them upside down to ensure better preservation.

6. This chutney is a delicious accompaniment, perfect for foie gras or white meat. Serve without moderation!
