Ingredients
- - 1 kg of pumpkin or orange squash
- - 2 large potatoes
- - 4 fresh eggs
- - 75 g of grated Gruyère cheese
- - 75 g of finely grated Parmesan cheese
- - 80 g of unsalted butter
- - 1 tablespoon of powdered sugar
- - breadcrumbs for the top
- - freshly grated nutmeg
- - salt and pepper to taste
Preparation
1. Start by peeling and cutting the pumpkin and potatoes into large cubes. Then immerse them in a large pot of boiling salted water, add the sugar, cover, and let simmer for 30 minutes.
2. Once cooked, drain the vegetables in a cheesecloth to remove all the moisture (tip: you can prepare this the day before and let it drain overnight, as the pumpkin releases a lot of water).
3. Pass the mixture through a sieve or blend it to obtain a smooth puree. Season with salt, pepper, and a touch of grated nutmeg. Incorporate 50 g of butter cut into small cubes and the grated cheeses.
4. Beat the eggs and mix them into the puree, stirring carefully. Preheat the oven to 220°C (thermostat 6-7).
5. In a not-too-wide baking dish, melt the remaining butter to grease the bottom and sides of the dish well. Pour out any excess butter into a bowl.
6. Pour the pumpkin mixture into the dish, sprinkle with breadcrumbs, and drizzle with the remaining melted butter. Finally, bake for about 50 minutes at mid-height.
