- - 2 chicken thighs
- - About 10 button mushrooms
- - 1 onion, peeled and sliced
- - 1 red bell pepper, diced
- - 5 small waxy potatoes, cut into pieces
- - 200 ml of thick cream
- - 1 pack of lardons
Preparation
1. In a pot, heat a mixture of oil and a knob of butter.
2. Once the oil is hot, brown the 2 chicken thighs on each side for about 5 minutes.
3. Meanwhile, slice the mushrooms, chop the onions, dice the bell pepper, and finally, cut the potatoes into thick slices about 2 cm thick.
4. Sauté the onions for a few moments before adding all the other vegetables and the lardons to the pot.
5. Add a large glass of water, cover, and let it simmer for 25 minutes. Make sure to check the potatoes' doneness by piercing them with a knife: the tip should sink in without resistance.
6. When the potatoes are cooked, remove the excess water (leaving about 1 cm in the pot).
7. Stir in the cream and mix thoroughly. After one minute of cooking, you can serve!
