  • Preparation time: 20 min
  • Cooking time: 5 min + 20 min
  • Servings: for 4 people
  • Difficulty: Easy

Ingredients

  • - 1 butternut squash weighing about 1.2 kg
  • - 200 g of smoked bacon
  • - 2 tablespoons of chopped aromatic herbs: chervil, parsley, chives, etc.
  • - 2 tablespoons of pine nuts
  • - Salt, pepper to taste
  • - A pinch of nutmeg
  • - Liquid cream
  • - Grated Parmesan according to your preferences

Preparation

1. First, with a good knife, cut the butternut squash into cubes of about 3 cm, then peel the pieces (it's better done in this order).
2. Steam the cubes or cook in a little unsalted water for 5 minutes, until they are tender but not falling apart.
3. While that is cooking, chop the smoked bacon into smaller pieces, so it incorporates well.
4. Then, place the squash and bacon in a baking dish, mixing gently (if the squash breaks a little, it's not a tragedy).
5. Add the chopped herbs and pine nuts to your liking.
6. Season with nutmeg and pepper. Be light on the salt, as the bacon is already salty (for my part, I don't use any and rely on the nutmeg).
7. Add a small drizzle of liquid cream (about 5 cl), then generously sprinkle with grated Parmesan.
8. Bake for about 20 minutes in a preheated oven at 210°C.
9. Finally, serve hot, accompanied by a nice green salad.
