Ingredients

  • - 50 grams of dark chocolate, 50 grams of milk chocolate (or 100 grams of bittersweet chocolate)
  • - 100 ml of liquid heavy cream
  • - 80 grams of butter

Preparation

Preparation should be done immediately to prevent the glaze from hardening.

1. Start by chopping the chocolate into small pieces. Melt the chocolate with the butter in a double boiler.

2. Meanwhile, heat a little cream in a small saucepan.

3. Once the chocolate and butter are melted, mix the two preparations while stirring vigorously until you obtain a smooth and homogeneous mixture. You can add spices according to your tastes.

4. Then pour the glaze over your cake and place it in the fridge to let the glaze set.

5. If you are using only dark chocolate, adding 50 grams of granulated sugar with the butter will make the glaze less bitter.

6. For a lighter version, omit the cream and incorporate a few tablespoons of water into the chocolate/butter mixture instead.
