Ingredients
- - 4 eggs + 1 yolk (optional)
- - 150 g grated Gruyère cheese
- - 150 g sifted flour
- - 80 g butter + 15 g for greasing the baking sheet
- - 1 pinch grated nutmeg
- - salt, pepper
Preparation
1. Preheat your oven to 200°C (6-7th setting).
2. In a saucepan, bring 250 ml of water to a boil with the butter and a teaspoon of salt.
3. Remove from heat and add the flour all at once, then mix vigorously. Let it dry over low heat for a minute.
4. Let it cool slightly, then add the eggs one by one, stirring well after each addition.
5. Fold in the grated Gruyère cheese, nutmeg, salt, and pepper.
6. Using two teaspoonfuls, place small mounds of dough on a previously buttered baking sheet.
7. If desired, brush the gougères with a little egg yolk using a brush.
8. Bake for 25 minutes, checking the cooking periodically.
