Scallops Recipe with Shallots and White Wine

Ingredients
- - 350 g of scallops (ideally frozen, well drained)
- - 200 g of shallots (about 6 medium
- - sized shallots)
- - 40 g + 20 g of butter (preferably salted butter)
- - 1 whiskey glass of dry white wine (such as Muscadet)
- - salt and pepper to taste
Preparation
1. Thaw the scallops in milk to regain their texture.
2. Drain them, then peel the shallots before finely chopping them.
3. Preheat your oven to 180°C (thermostat 6).
4. In a pan, melt 40 g of butter and add the sliced shallots.
5. Cook on low heat for about 30 minutes, stirring occasionally for even cooking. The shallots should become slightly golden.
6. In another pan, melt 20 g of butter and place the scallops in it, then season with salt and pepper.
7. Quickly brown them over high heat, then turn off the heat as soon as they are well colored.
8. Once the shallots are golden, add the glass of white wine and simmer until the liquid almost completely evaporates.
9. Then add the scallops with their juices to the shallots' pan and cook for about 5 minutes, stirring gently.
10. Fill shells with this tasty mixture.
11. Sprinkle with breadcrumbs or grated cheese, add a dot of butter on top, and bake for 5 to 10 minutes (until the butter melts, the breadcrumbs brown, and the shells are heated through).
