- - 1 packet of frozen broccoli puree
- - 1 packet of frozen celery puree
- - 1 piece of fresh salmon
- - 1 lemon zest
- - garlic croutons for crunch

- - thick fresh cream
Preparation
1. Start with the carrot puree, which is usually in the form of frozen pebbles. Place them in a microwave-safe dish and heat as directed on the package (about 5 minutes generally).
2. Once hot, mix in two generous spoons of fresh cream and stir well. Set this preparation aside.
3. Repeat the process for the broccoli and celery purees...
4. While your purees are heating, cut the piece of salmon into small cubes. Drizzle with lemon juice, which will flavor the salmon without cooking it.
5. Prepare the croutons: place them in a freezer bag and crush them coarsely to get crunchy pieces.
6. For assembling the verrines: start with a layer of carrot puree, followed by a layer of broccoli, then the celery puree... Don’t forget to sprinkle these layers with salmon cubes.
7. Add crouton crumbs on top for a crunchy touch, and a few sprigs of chives for a pop of color.
