Ingredients

  • - 300 g of duck foie gras block
  • - 6 slices of gingerbread
  • - 2 large onions
  • - 4 fresh figs (dried figs can replace fresh ones, in which case double the quantity)
  • - 3 tablespoons of honey
  • - a bit of butter

Preparation

1. Cut the two onions into thin slices.
2. Sauté them gently for 2 or 3 minutes in a pan with a bit of butter.
3. Add the figs cut into quarters.
4. Stir fairly regularly.
5. If necessary, add a bit more butter to ensure everything browns well for 5 to 10 minutes.

6. When the figs begin to soften and the onions become translucent, incorporate the honey.
7. Stir the mixture.
8. Let it caramelize gently.
9. Stop cooking when everything is well melted but the mixture remains juicy.
10. Set aside.

11. Brown each side of the slices of gingerbread in a buttered pan.
12. Let them cool.
