Ingredients

  • - 1 kg of pork meat (choice between belly or shoulder)
  • - 1 kg of fatty pork, very tender
  • - lard, for texture
  • - a blend of four spices
  • - a few sprigs of fresh thyme
  • - a bay leaf for aroma
  • - salt and pepper, to taste

Preparation


1. In a large pot, start by adding the meat and lard in pieces, salt, pepper, the blend of four spices, a sprig of thyme, and a bay leaf.
2. Then incorporate 200 ml of water, just enough.
3. Cover the pot and let it simmer on very low heat for 4 hours. Remember to stir occasionally, especially during the last hour of cooking. This will help a lot.

4. At the end of the 4 hours, check that the meat has taken on a nice golden color and that it easily shreds into strands. That's a good sign!

5. Let it cool down. Before transferring it to jars, feel free to mash the meat with a fork or pass it through a grinder, depending on the consistency you prefer.

6. Once everything is in jars, cover with lard and place a piece of food paper (like baking paper) on top.
7. Your rillettes can be kept for several months in a cool place. It's time to enjoy!
