Ingredients
- - 4 small veal kidneys
- - 2 onions
- - 400 g of bacon
- - 800 g of wild mushrooms (oysters, porcini, boletus, etc.)
- - 200 ml of liquid cream
- - salt, pepper...
Preparation
1. Ask your butcher to clean and cut the kidneys into cubes (it's easier; otherwise, feel free to do it yourself!).
2. Peel the onions and chop them finely. Do the same for the mushrooms (a little tip: ready-to-use jarred mushrooms can work just fine).
3. In a frying pan, heat a mixture of oil and butter, then add the onions over high heat. After 2 minutes, when they become slightly translucent, add the bacon. Stir, cover, and reduce the heat.
4. Let it simmer for about 10 minutes.
5. Remove the onion/bacon mixture and keep it warm without cooking.
6. In the same pan, over high heat, add the kidneys and stir. Adjust the seasoning with a bit of salt (not too much!) and pepper.
7. After about 10 minutes, add the mushrooms along with the reserved onions and bacon. Stir and let simmer for another 5 minutes.
8. One minute before serving, pour in the cream, stir, and heat over high for 30 seconds. Serve with rice or baked potatoes.
