Ingredients

  • - 8 quails, plucked and eviscerated
  • For the stuffing:
  • - 10 slices of crispy bacon
  • - 10 slices of flavorful smoked breast
  • - 350 g of tender chicken livers
  • - 100 g of juicy currants
  • - 1 large bunch of fresh white grapes
  • - 4 shallots, peeled and finely chopped
  • - 1 teaspoon of golden honey
  • - a splash of cognac
  • - salt and pepper to taste

Preparation

1. In a buttered casserole, brown the quails on each side before gently flambéing them with cognac.

2. Remove the quails from the casserole and set them aside for now.

3. Use the same casserole to prepare the creamy stuffing.

4. Peel and chop the shallots, then cut the chicken livers and 2 slices of smoked breast into pieces.
5. Sauté the shallots, pieces of chicken livers, and smoked breast in a mixture of butter and olive oil.
