1. Start by melting 40 g of butter or margarine in a Dutch oven. Once the fat is hot, add the duck to brown it.

3. Then place the Dutch oven in the preheated oven at 200°C (gas mark 6/7) without a lid.
Cook for 40 to 45 minutes, basting the duck regularly with its cooking juices.
