Ingredients
- - 1 duck breast (about 400 g)
- - 4 fresh, ripe, and juicy figs
- - 10 g of fresh ginger, grated
- - 3 tablespoons of acacia honey, ideally organic
- - 5 cl of balsamic vinegar, for a strong taste
- - 10 cl of aromatic chicken broth
- - Salt and freshly ground pepper, to taste
Preparation
1. In a hot pan, place the duck breast skin-side down and let it roast for about 8 minutes.
2. After this time, flip the duck breast to cook the other side for 5 minutes.
3. Once cooked, transfer the duck breast to a small oven-safe dish and keep it warm (be careful, it should not continue to cook).
4. Remove the excess fat from the pan, then add the halved figs.
5. Roast them for a few minutes before placing them in the dish with the duck breast.
6. Deglaze the pan with balsamic vinegar, incorporate honey, grated ginger, and chicken broth.
7. Let it reduce and adjust the seasoning to your liking.
8. For plating, slice the duck breast into strips, arrange the half figs beside, then generously drizzle with the sauce.
