Ingredients

  • - CUSTARD:
  • 250 ml of milk
  • 2 egg yolks
  • 40 g of sugar
  • 20 g of flour
  • 1 vanilla pod.
  • - SYRUP:
  • 250 ml of water
  • 100 g of sugar
  • 3 tablespoons of rum.
  • - TOPPING:
  • 300 g of mixed red fruits
  • 30 ladyfingers.

Preparation


To prepare the custard:
Start by blanching the egg yolks with the sugar.
Add the flour and mix well.
Gradually incorporate the simmering milk, previously infused with the vanilla pod.
Bring to a boil for 5 minutes while constantly stirring.

For the syrup:
Boil the water and sugar for 1 minute.
Remove from heat and add the rum.


In a charlotte mold, line the bottom with biscuits that you have previously dipped one by one in the syrup.
If necessary, cut the strawberries.
Alternate layers by first adding a layer of custard, followed by a layer of strawberries (sprinkled with sugar), and then another layer of biscuits.
Finish by covering with biscuits to ensure the firmness of the charlotte.

Carefully close the charlotte to remove the air.

Once formed, gently unmold and decorate with a few fruits and a bit of whipped cream.
