Ingredients

  • - 1 apple
  • - 1 slice of duck breast, dried and sliced
  • - 1/2 cube of chicken broth
  • - 10 cl of port
  • - the juice of one lemon
  • - 1 sheet of gelatin

Preparation

1. Grate the apple, then drizzle it with lemon juice. Chill it after distributing it into cups (plan for two cups per person).

2. Dissolve the broth in 50 cl of water. Once the mixture boils, add the port, followed by the gelatin that you have previously softened in a bowl of cold water.

3. Mix everything vigorously over high heat for a few minutes.

4. Pour this warm mixture over the grated apple in each cup.

5. Refrigerate for 2 hours.

6. Just before serving, place two slices of duck breast in each cup.
