If you're looking for an easy and friendly recipe to cook the last tomatoes from the garden, try our tomato mustard quiche! Simple and tasty, this dish will delight both young and old.
Here are the ingredients needed to prepare a tomato mustard quiche for 4 people:
220 g of flour
2 pinches of salt
2 turns of the pepper mill
7 cl of olive oil
13 cl of boiling water
3 or 4 ripe tomatoes
2 tablespoons of Dijon mustard
herbs de Provence
50 g of bacon lardons
3 eggs
20 cl of fresh or plant-based cream
grated cheese
To prepare this mustard tomato quiche, we recommend making your own quick shortcrust pastry by following the method below.
1- Pour the flour, salt, and pepper into a mixing bowl.
2- Pour the olive oil into a measuring cup and top it up with boiling water until you reach a total of 200 ml.
3- Make a well in the flour and pour the liquids into the center, being careful not to burn yourself.
4- Mix with a wooden spoon, then knead the ingredients by hand until you can form a ball of dough.
5- This quick shortcrust pastry does not need to rest. Roll out the dough by hand in a greased pie dish. Prick the bottom and mark the edges with a fork.
The preparation of the tomato mustard quiche is simple and quick.
If you're short on time, you can of course use a store-bought pie crust.
1- Wash the tomatoes and slice them into rounds.
2- Spread the mustard on the bottom of the crust, then arrange the tomato slices on top. Sprinkle with herbes de Provence.
3- Distribute the bacon strips over the top of the quiche.
4- In a bowl, beat the eggs with the cream. Season with salt and pepper.
5- Pour this mixture over the quiche and sprinkle the top with grated cheese.
1- Preheat your oven to 200°C.
2- Bake this mustard tomato quiche for about 30 minutes, until it is nicely golden.
3- You can serve this quiche as a starter or as a light meal, accompanied by a green salad.
