The Carob Cake: A Gourmet Cake

Carob powder is an alternative to cocoa with a flavor reminiscent of both milk chocolate and caramel. It is suitable for people who are gluten intolerant or allergic to cocoa. To use this unusual ingredient, we suggest you discover a recipe for carob cake.

Ingredients

Here are the ingredients needed to make a carob cake for 6 people:

3 eggs
75 g of wholemeal or rapadura sugar
70 ml of olive oil
30 ml of almond milk
50 g flour type 65
50 g flour type 110
20 g carob powder
1 teaspoon of baking soda
1 tablespoon orange blossom water
a knob of vegetable margarine for the mold

Preparation

The preparation of carob cake is very simple.

1- Whisk the eggs with the sugar.

2- Add the olive oil and almond milk.

3- Add the two flours, the baking soda and the carob powder.

4- Add the spoonful of orange blossom water last.

Cooking

1- Preheat your oven to 180°C.

2- Pour the cake batter into a greased cake pan.

3- Bake the carob cake for about 40 minutes until it is puffed up and the blade of a knife stuck in the heart of the cake comes out clean.

4- Let it cool before unmolding and slicing.

To note: this cake has the color of chocolate but not the taste. If you want to find the bitterness of cocoa, we recommend serving this cake with bitter orange jam or topping it with jelly.

The carob is the fruit of the carob tree, a typical Mediterranean tree. It comes in the form of a hanging pod 10 to 30 cm long.

The more or less dark brown carbob powder is obtained after drying and grinding this pod.

It is considered a super food because of its richness in fiber and nutrients. It contains minerals and vitamins but also antioxidants from the polyphenol family.

Thanks to its content of soluble fibers such as pectin, it can be used as a natural appetite suppressant and a regulator of intestinal transit in case of constipation or diarrhea.
