Orange Carrot Cake: A Gourmet Recipe

The carrot cake is an American dessert of which there are many variations. We propose to you to discover a very greedy recipe of orange carrot cake with a glazing containing Philadelphia cheese.

Ingredients

Here are the ingredients needed to make an orange Carrot cake for 6 people:

4 eggs
150 g sugar
2 packets of vanilla sugar
7 cl of Sunflower oil
7 cl of milk
220 g of flour
1 sachet of baking powder
3 or 4 finely grated carrots
1 teaspoon of powdered nutmeg
1 level tablespoon of powdered cinnamon
1 organic orange
1 handful of slivered almonds
1 knob of butter for the mold

150 g Philadelphia cheese
2 teaspoons lemon juice
lemon zest
15 g melted butter
2 tablespoons powdered sugar

To note: Philadelphia cheese is the closest brand to the American cream cheese traditionally used to make white frosting for carrot cakes.

Preparation of the cake

1- In a large bowl, whisk the eggs with the sugar and vanilla sugar.

2- Add the liquid ingredients (milk and oil), whisking well with each addition.

3- Mix the flour and the yeast before adding them little by little to the dough.

Cooking

1- Preheat the oven to 180°C.

2- Pour the batter into a buttered cake pan.

3 Bake the orange Carrot cake for about 45 minutes. A blade stuck in the heart of the cake should come out clean.

4- Let the cake cool before unmolding, then let it cool completely before icing.

Preparation of the glaze

1- Melt the butter and let it cool.

2- In a large bowl, mix the Philadelphia cheese with the lemon juice and zest.

3- Add the melted butter and powdered sugar. Adjust the amount of powdered sugar until you obtain a creamy texture, as in the photo below:

4- Spread the frosting on the cake with a spatula or a simple fork.

5- Let the frosting set in the refrigerator for at least 30 minutes before serving the cake.

To note: this orange carrot cake is delicious with a cup of tea, for breakfast or a snack or even for a very gourmet brunch!
