Lentil Salad With Smoked Salmon: A Simple Recipe

Nutritionists are unanimous in recognizing the health benefits of legumes. Unfortunately, most French people don't eat enough of them. To help you integrate them into your menus, even in summer, here is a simple recipe for lentil salad with smoked salmon.

Ingredients

Here are the ingredients needed to make a lentil salad with smoked salmon for 4 people:

250 g of green lentils from Le Puy
4 large slices of smoked salmon
1 red onion
2 organic yellow lemons
2 bay leaves
a branch of thyme
a sprig of rosemary
3 tablespoons of rapeseed oil
salt and pepper
fresh or dried dill

Cooking lentils

To prepare this lentil salad with smoked salmon, start by cooking and cooling the green lentils from Le Puy.

1- Rinse the lentils and pour them into a large pot of cold water.

2- Make a bouquet garni by tying the sprigs of thyme and rosemary between the two bay leaves and add it to the lentils' cooking water

To note: to prevent the bouquet from disintegrating during cooking, you can wrap it in gauze.

3- Bring to a boil and simmer the lentils for 25 minutes.

4- When the green lentils are cooked, refresh them under cold water and drain them in a chinois.

5- Pour the lentils into a salad bowl, add salt and pepper. Add a tablespoon of rapeseed oil and let cool to room temperature.

Preparation of the salad

1- While the lentils are cooling, cut the slices of smoked salmon into thin strips.

2- Slice the red onion. Rinse and chop the dill.

3- Squeeze a lemon and reserve the juice. Cut the second lemon into slices and cut each slice into four.

4- When the lentils are cold, season them with the remaining rapeseed oil and lemon juice to taste. You can also, if you wish, prepare a real vinaigrette with Mustard and/or honey.

5- Stir in the chopped red onion, dill and smoked salmon strips, then divide the lentil salad with smoked salmon among the bowls.

6- Decorate each bowl with a few more salmon strips and small lemon wedges.
