French Toast With Coconut Milk And Mango: An Easy Recipe

For a change from the traditional French toast made with eggs and cow's milk, we suggest a variation prepared with coconut milk. This coconut milk and mango French toast is just as comforting as the original, with a little exotic twist.

Ingredients

Here are the ingredients needed to make coconut milk mango French toast for 4 people:

2 fresh mangoes or 2 bowls of frozen mango pieces
half a stale baguette
20 cl of coconut milk in a brick
2 eggs
3 tablespoons of maple syrup
grated coconut
a knob of butter for cooking
maple syrup to serve

Preparation of the accompaniments

For this coconut milk and mango French toast recipe, start by preparing the sides.

1- If you are using fresh mangoes, peel and dice them.
If you are using frozen fruit, thaw them in the refrigerator several hours in advance.

2- Toast the grated coconut by heating it for a few minutes in a frying pan without adding fat.

Preparation of the French toast

For this coconut milk and mango French toast recipe, I counted two slices of French toast per person.

1- Cut the stale half baguette into 8 not too thin slices.

2- In a deep dish, whisk the whole eggs with the coconut milk and maple syrup.

3- Dip the bread slices in this mixture until they are well coated.

Cooking

1- Melt the butter in a hot pan.

2- Brown the French toast for about 3 minutes on each side.

3- Take the slices out as you go into a dish.

4- To present this coconut milk and mango French toast, arrange two slices of French toast on each plate.

5- Add a few cubes of mango. Sprinkle with toasted coconut and add a drizzle of maple syrup just before serving.
