1 roll of shortcrust pastry.
20 cl of liquid cream.
3 eggs.
80 g of grated cheese of your choice.
salt and pepper.

Potato Cooking

The rustic quiche with bacon and potatoes is easy to prepare. The longest step involves preparing and cooking the potatoes.

1- Peel the potatoes and slice them into thin rounds.

2- Blanch the potato slices for about 10 minutes in a pot of boiling water.

This step partially cooks the potatoes, but be careful not to let them become too soft.

Preparation of the filling

1- Once the potatoes are ready, drain them and set aside.

2- Peel and thinly slice the onion.

3- Heat a frying pan and sauté the bacon and sliced onion together. If the bacon does not render enough fat, you can add a drizzle of olive oil.

4- Add the potato slices and sauté everything for a few minutes. This rustic sauté will make up the filling for your country-style quiche with bacon and potatoes.

5- In another container, prepare the quiche mixture. Beat the eggs with the cream and season with salt and pepper.

Quiche Assembly

1- Roll out the shortcrust pastry in a pie dish. Prick the bottom with a fork.

2- Spread the sautéed potatoes, onion, and bacon over the pastry base.

3- Pour the mixture of cream and eggs on top.

4- To finish the assembly, sprinkle the rustic bacon and potato quiche with grated cheese. For this recipe, you can use the cheese of your choice: Emmental, Gouda, Comté, or Cheddar for example.

Baking the quiche

1- Bake this country-style quiche for about 30 minutes at 180°C.

2- Serve the bacon and potato country-style quiche hot, accompanied by a green salad.
